Koval Dry Gin

Koval Dry Gin is made in Chicago by Koval Distillery, founded in 2008 as the city's first distillery since the mid-1800s and known for its organic, grain-to-bottle spirits. The gin is distilled with 13 woodland spices and botanicals including juniper, angelica root, coriander, grains of paradise and rosehip, and bottled at 47% ABV (94 proof).

Koval describes juniper and wildflowers on the nose and a dry but vibrant palate of emerald grass, golden citrus and white pepper with a round, floral body. Difford's Guide found it distinctive within the savory gin category, with pine resin and an unusual overripe-banana character to the juniper, cracked black pepper, coriander and lavender through the finish. It is a characterful gin for a Martini or a Negroni, and the 94 proof gives it plenty of presence in a G&T.
